  Add-On was working fine for weeks, after Blender 4.0 update whenever I press the new vertex color it keeps applying color red

  Hey, I'm glad you've found my addon useful. The "New Vertex Color" option will pick a unique color based on the objects in your Active Collection. You can see which collection is your Active one by looking at the rounded rectangle outline around the collection icon in the Outliner or in the Status Bar which can be enabled by going to Preferences > Interface > Editors > Status Bar > Scene Statistics. You can change your Active Collection by clicking it in the Outliner. The first color chosen is always pure red and then all following colors are random, so this is likely why you're always seeing red. Hope this helps.
